Bacon Wrapped Squirrel
Squirrel hunting is not only fun and exciting but it can yield lots of extra meat for your dinner table. Here is one recipe that you mind find to be delicious the next time you have a couple fuzzy tails in your hunting bag!
squirrel legs, front or rear
hickory smoked bacon
Soak the legs in beer for 2 – 3 hours. Remove and drain.
Sprinkle to taste with garlic powder ( i prefer fresh minced garlic), pepper, salt and the minced onion (or if you’d like to add a dry rub for the grilled squirrel you can use that instead).
Wrap each leg with bacon. Use toothpicks to secure bacon.
Place on hot grill. Cook over medium heat until cooked through (approx. 10 minutes, turning occasionally). Be careful not to overcook.
